Description
The deep, golden colour gives rise to an extremely fine effervescence. The initial nose reveals a hint of hazelnut and a note of baguette against a backdrop of cherry. The first impression on the palate is lively, characterised by a crisp acidity and a refreshing effervescence. Following this exceptionally pure attack, the wine reveals its structure, richness and concentration. The finish is taut, long and very clean. It concludes with a lovely hint of acidity and minerality.
In the vineyard, in the cellar
The Chopin estate, located in the village of Monthelon (south of Épernay), has been cultivating vines since the 18th century, but it was not until 1947 that the Julien CHOPIN brand was established. The vines are cultivated in accordance with Champagne traditions, whilst also employing a system of integrated pest management to protect the environment.
Food and Wine Pairings
A delightful aperitif, it pairs well with puff pastry canapés or lightly smoked fish on toast (salmon, trout, eel), or even thinly sliced cured ham. The dining table remains its true domain, served with a chicken and mushroom fricassee, or as an accompaniment to a fillet of turbot. Few desserts, however, with the exception of a salad of strawberries and other red berries.
