
David Bienfait established his vineyard in 2009 in the village of Buissières, in the heart of the Mâconnais region in southern Burgundy. His 6-hectare vineyard spans the villages of Charnay, Davayé and Vergisson.
He produces organic wines from the Mâcon-Villages, Saint-Véran and Pouilly-Fuissé appellations. His wines stand out for their precision and their elegant expression of each terroir.
David Bien is undoubtedly a rising star in the Mâconnais region who is well worth keeping a close eye on.
With a passion for nature, David Bienfait focuses his efforts on meticulous vineyard management using organic farming methods. He employs controlled natural grass cover and/or ploughing to promote microbial life in the soil. Treatments are kept to an absolute minimum, with each intervention carefully considered based on disease pressure and weather conditions.
Once harvested at optimum ripeness, the grapes are carefully pressed. The long alcoholic fermentation takes place in barrels and vats. The temperature is controlled between 16 and 18°C to preserve the wine’s aromatic finesse.
During ageing, the barrels are regularly stirred down, depending on the vintage, to impart richness and body to the wine. The wines are blended in vats and barrels before undergoing light filtration and bottling.
