
Les Champs de l’Abbaye is a small, family-run estate covering 6 hectares, established in 1997 by Alain and Isabelle Hasard. It is situated in Aluze, a pretty village perched on the hills of the Côte Chalonnaise. The estate has been cultivating its vines organically since 1999 on the terroirs of Rully, Mercurey and the Côte Chalonnaise. Aromatic, distinguished and complex, Alain and Isabelle’s wines are characterised by great precision and remarkable purity.
The name of his estate, Les Champs de l’Abbaye, simply derives from the name of the cadastral section on which the estate’s buildings stand. Historical records already mention vineyards in this area as far back as the 13th century. Finally, for this music lover, it is but a short step from ‘Champs’ (fields) to ‘chant’ (song), and he has adorned his bottles with a treble clef.
Having practised organic viticulture since 1999, Alain Hasard also applies certain biodynamic principles – though without certification – as an independent and determined winegrower. There is no magic formula, then, but rather relentless, uncompromising hard work, attuned to the soil. In the cellar too, respect for the juice takes precedence: after total destemming, fermentation is spontaneous, with vatting lasting 8 to 10 days, followed by racking and ageing in barrels for 11 to 14 months, 25 to 30% of which are new. No racking during ageing; bottling takes place without fining or filtration. All done with the utmost care.
