
Most of the 7 hectares of Nicolas Delfaud’s estate are situated on the hills above the village of Verzé. He has also owned a few acres of vines in Saint-Véran since 2018. This former Parisian sommelier began his career change in 2009 in Davayé, learning the trade at Château des Rontets for several years before launching his own estate in 2015.
Since his first vintage in 2016, Nicolas Delfaud has been crafting precise wines with a clean, taut style, devoid of any pretension. The understated ageing process brings out the wines’ salinity, freshness and minerality.
Most of the estate is situated on the hills above the village of Verzé. Facing due east, the Gamay and Chardonnay vines are planted at an altitude of between 350 and 410 metres on marl-limestone soils, set against an enchanting backdrop.
From his very first vintage, Nicolas Delfaud began the transition to organic farming (AB ECOCERT). He was awarded this certification for the 2019 vintage.
To ensure that the unique character of this terroir is expressed to the full, the soil is carefully tilled and meticulous grass management is practised to guide the vines towards controlled yields and ripeness.
The grapes are harvested by hand into 40-kg crates to ensure they remain in the best possible condition from the vine to the press. Fermentation takes place using indigenous yeasts, and the wines are aged on the lees, either in vats or in barrels for a minimum of five to seven years, with minimal intervention.
