Pithon-Paillé’s Mozaik Blanc is an Anjou that truly reflects its limestone and schist terroir. Its structure is unmistakable; wine lovers will be in for a treat. The fruit is crisp, fresh and precise. The texture is delightfully smooth. The body and acidity blend together beautifully. ‘A truly fine Chenin,’ as Jo Pithon would say.
In the vineyard, in the cellar
The Mozaik d'Anjou blanc cuvée from the Pithon-Paillé estate comes from clay-loam soil over a limestone and schist subsoil. The vines are cultivated organically and are in the process of converting to biodynamics.
The grapes are pressed and then cold-settled. Fermentation takes place in truncated wooden vats, using indigenous yeasts. The wine is then aged for a year in these same vats.
