Description
This is not a white wine from the Grès Vaillant estate; it is a Sauvignon orange wine with a dangerously drinkable character. The nose alternates between notes of orange and candied fruit. On the palate, it displays splendid energy and unfolds with a well-balanced structure, good length and a hint of bitterness on the finish. A truly lovely orange wine that pairs well with mature cheeses or a vegetable curry.
In the vineyard, in the cellar
- Appellation: Vin de France
- Farming: Organic
- Terroir: Cool, high-altitude terroir on sandstone bedrock. The ‘Les Gravettes’ plot is dotted with small ‘gravel’ patches ideal for white wine
- Grape variety: Sauvignon planted in 2007 (planting density of 4,444 vines per hectare)
- Soil cultivation: vines worked using our three draught horses, Rustica, Colette and Carolus
- Harvest: Hand-picked into small 34-litre perforated crates
- Maceration: Maceration of the grapes with their skins for 12 days (the ‘orange wine’ method)
- Fermentation: using indigenous yeasts from the plot, with a starter culture.
- Ageing: 6 months in stainless steel vats
