Description
Guilhem Barré Sous le Bois is a Cabardès that clearly asserts its southern character, yet retains a juicy tension. The nose evokes very ripe black fruits and spicier notes. The attack on the palate is powerful, with a lovely, full-bodied structure, revealing notes of stone fruit and alcohol. A marvel of balance, the wine retains remarkable freshness and liveliness.
In the vineyard, in the cellar
manages his entire vineyard using organic farming methods. He uses no chemical fertilisers or weedkillers, preferring to add organic matter and plough the soil to keep it alive. The vineyard is protected exclusively with organic products. All synthetic products are banned. This respect for the terroir allows the yeasts naturally present on the grape skins to be preserved. Fermentation therefore takes place without the addition of industrial yeasts. The result is unpretentious wines, characterised by their terroir of origin.

. Clay-limestone terroir ‘Ventenac limestone’. Organic farming. Hand-harvested into small crates. Destemming, crushing, spontaneous fermentation (no added yeasts). Vatting for 15 days. Matured in vats. No fining. No filtration. Low sulphite content.
