The Guillot-Broux estate
The 17 hectares of vineyards span three villages: Cruzille, Grévilly and Chardonnay, divided into three appellations: Bourgogne, Mâcon Cruzille and Mâcon Chardonnay. The vines are mainly situated on east-facing slopes for maximum sunshine and on clay-limestone soils ideal for their development. The different geological formations give each terroir its own character, and the resulting wines.
The village of Cruzille produces wines with great minerality that always require a long time to express themselves, a characteristic explained by the nature of the soils. The wines of Grévilly and Chardonnay are produced on deeper soils. They are often more charming and fruitier in their youth. Each plot is vinified separately, but only the finest terroirs are sold individually.

(products composed of stable active molecules). Indigenous yeasts are used and sulphite levels are kept to an absolute minimum.
The white wines made from the Chardonnay grape variety are pressed immediately to avoid any risk of spoilage, then the musts are transferred to barrels where they undergo alcoholic and malolactic fermentation. After this second fermentation, the wines are racked and then transferred back to barrels for the terroir wines and into vats for the Mâcon Villages.
