Description
On the steep slopes of the Arlois hillsides, the Pacaud brothers produce a magnificent Saint-Véran Les Prés Batards. It is a wine that is powerful, complex, dense and mineral all at once. The aromatic range shifts between citrus notes, exotic hints and ripe yellow-fleshed fruits. The wine’s richness and smoothness are balanced by a lovely acidity and subtle bitter notes on the finish. A truly great bottle for those who have the patience to wait a few more years, to accompany a veal escalope with cream sauce.
Technical details
- GRAPE VARIETY: 100% Chardonnay – 50-year-old vines.
- VINEYARD: Vines on the south-west facing slopes of the Arlois Valley, in Chasselas.
- SOILS: Very steep slopes on very shallow soils of sandstone bedrock and limestone with enrochement.
- VINIFICATION: Hand-harvested, whole bunches taken directly to the press. Direct pressing. Sulphur-free vinification using indigenous yeasts. Light settling.
- AGEING: On lees in 500-litre oak barrels (3 wines) for 12 months, followed by 10 months in vats on lees after blending. Light filtration
