David Bienfait’s Les Vieilles Vignes Pouilly-Fuissé combines minerality, richness and depth: a fine ambassador for the appellation. Aged in barrels, the wine reveals creamy and slightly vanilla-like notes that complement ripe, sparkling orchard fruit and hints of citrus. The wine’s richness and depth are expressed through a beautiful, perfect balance with lovely bitter notes on the finish.

David Bienfait’s Pouilly-Fuissé Vieilles Vignes in detail:

  • Terroir: A combination of two terroirs, one of which lies beneath La Maréchaude. Solutré rock scree (similar to Les Crays) and grey clay/marl rich in shells (‘pierre coquille’, a very hard stone)
  • Vines: 1940
  • Farming: organic (certification 2024)
  • Vinification / Ageing: Hand-harvested, slow and gentle whole-bunch pressing; 60% of the harvest is vinified in oak barrels (used for 3 to 4 vintages) for 11 months, and the remaining 40% in vats.
    Temperature-controlled alcoholic fermentation for 2 to 3 months.
