Description
Adessias is a new cuvée from Clos des Mourres, sourced from small, north-west-facing hillside plots at Col du Débat in Cairanne. It is a blend of 90% old Grenache vines (aged 50 to 80 years) and a few local grape varieties. The estate’s signature style is evident in its finesse, its retention of freshness and its drinkability. This ambitious cuvée, aged in jars and demi-muids, is bursting with energy. As the Provençal meaning of the cuvée’s name suggests, take the time to savour it: Cheers!

Preserving the joy of our craft, keeping our curiosity alive, experimenting, making mistakes and finally finding the right balance – this has been our spark of joy: the excitement of bringing together terroir, grape varieties and containers! “Adessias” is a traditional blessing our ancestors used to say. Literally, it means ‘for a long time to come’: this was in an era when the value of time took precedence over all other values. Taking the time… what if we learnt to seize it again? … In Provence, it was used to say ‘cheers!’ or ‘may your happiness last forever!’. That is all we wish for you in the future!

Organic cultivation and biodynamic practices
Jean-Philippe and Ingrid Bouchet practise organic viticulture supplemented by biodynamic methods. This is primarily driven by their personal conviction to maintain living soils and authentically express the terroir. Vineyard work follows the lunar calendar, with ploughing and grubbing 2 to 3 times a year; vinification involves gentle extraction, minimal handling, short vatting, fermentation with natural yeasts, and no chemical products used. Sulphiting of 1g at bottling.
