A pale gold colour with silvery highlights. The nose reveals aromas of orchard fruits: green apple, pear and apricot. These are followed by white flowers and delicate hints of fennel, rosemary and white pepper. The attack on the palate is caressing, the development infinitely complex and the tension stunning. The finish ends on a refreshing salinity that leaves a feeling of lightness. Clos des Mourres 665 Jours is a beautiful wine that proves that great white wines can also be made in the south.
In the vineyard, in the cellar
A blend of White Grenache (60%), Clairete (20%) and Bourboulenc (20%) from vineyards surrounding the Clos des Mourres estate in Vaison-la-Romaine. Vinification begins with blending in vats, followed by ageing in 300-, 500- and 600-litre barrels, earthenware jars and stoneware eggs.
Organic cultivation, supplemented by biodynamic practices in line with personal convictions to maintain living soils and authentically express the terroir. Vineyard work follows the lunar calendar, with ploughing and grubbing 2 to 3 times a year; vinification involves gentle extraction, minimal handling, short vatting, fermentation with natural yeasts, and no chemical products used. Sulphiting of 1g at bottling.
