Description
The Arbois Pupillin Caillot from Domaine de la Borde is a Chardonnay of great purity. With white flowers on the first impression, the nose intensifies with aeration, revealing notes of brioche. Fresh and delicate, the palate is understated yet develops a lovely fruity character, blending peach and orange peel. A great Chardonnay!
In the vineyard, in the cellar
This Chardonnay from Domaine de la Borde is an Arbois Pupillin sourced from the renowned Côte de Caillot terroir. Stony clay-limestone topsoil over limestone bedrock, south-facing, steeply sloping, at an altitude of 500 m. Hand-harvested, partial destemming (30%), cold static settling (10°C) for 12 to 24 hours, alcoholic fermentation in barrels (600L, holding 3 to 6 wines). Aged on lees for 12 months.
Julien Maréschal runs his Domaine de la Borde using organic and natural farming methods. Respect for the terroir is reflected in key principles such as natural grass cover and soil management (ploughing, ridging, scarification, etc.). No chemical weed control, contact treatments without synthetic molecules… But also experiments in biodynamics since 2009 (horn manure and horn silica applied to all the vines). The harvest is, of course, carried out by hand at the exact point of ripeness, with rigorous sorting taking place in the rows and in the cellars. In the cellar, only indigenous yeasts are used and very little SO2 is added to remain as true to the terroir as possible.
