In the vineyard, in the cellar
The Cahors cuvée Le Pur Fruit du Causse de Combel La Serre in detail:
- Grape variety: Côt Noir (or Malbec)
- Vine density per hectare: 4,500
- Terroir: Grapes grown on the limestone Causse (between 320 m and 350 m above sea level) on predominantly clay-limestone soils
- Average age of vines: 30 years
- Yields: 40 hl/ha
- Vinification & ageing: Short-term traditional vinification (maceration for around a fortnight) in stainless steel and cement vats. Ageing lasts a full year and takes place exclusively in vats
A breath of fresh air for "Black Wine"
Historically known as "Black Wine" due to the dark, purplish colour of its Malbec grape variety, Cahors has long been regarded as an austere wine.
