Description
The Chardonnay La Marcette from Domaine de la Borde is an Arbois Pupillin produced from a terroir of red Triassic marl. West-facing, at an altitude of 300 metres, below the Côte de Feule. This unique terroir results in a smooth wine that combines finesse, energy and the minerality characteristic of Pupillin.
In the vineyard, in the cellar
The Domaine de la Borde’s La Marcette Chardonnay is grown on a slope in Arbois Pupillin at an altitude of 300 m. The grapes are partially destemmed and the juice ferments in 600-litre barrels for 3 to 6 months.
Julien Maréschal runs Domaine de la Borde using organic and natural farming methods. Respect for the terroir is reflected in key principles such as natural grass cover and soil management (ploughing, ridging, scarification, etc.). No chemical weedkillers, contact treatments free from synthetic molecules… But also experiments in biodynamics since 2009 (horn manure and horn silica applied to all the vines). The harvest is, of course, carried out by hand at the exact point of ripeness, with rigorous sorting taking place in the rows and in the cellars. In the cellar, only indigenous yeasts are used and very little SO2 is employed to remain as true to the terroir as possible.
