Description
The Muscadet sur Lie from Domaine de la Pépière boasts a classic pale colour with silvery highlights. Pleasantly lemony, the nose evokes its terroir with hints of damp stone. The structure on the palate is perfect, striking a balance between the roundness and the crisp, refined tension so characteristic of Muscadet. A very slight effervescence adds freshness, punctuated by a delicate salinity on the finish.
In the vineyard, in the cellar
The Muscadet sur Lie Domaine de La Pépière comes from a 12-hectare vineyard situated on the slopes of the Maine. The terrain is very stony, with a granitic subsoil (Clisson granite and Château-Thébaud granite). The soils are highly permeable, with plenty of gravel. These characteristics allow for early ripening. The vines are 25 years old on average.
The grapes are harvested by hand and transported to the cellar with great care. The pneumatic press is filled by gravity; the grapes are not crushed. A very gentle settling process allows the naturally occurring yeasts in the must to carry out fermentation. This cuvée remains on its fermentation lees until the following spring, without racking.
