Description
The Muscadet sur Lie Gras Moutons from Domaine de la Pépière offers a rich, full-bodied fruitiness that retains all its vigour. The palate unfolds with aromas of citrus and white-fleshed fruits. The finish is magnificent, underpinned by chalky and salty notes. Its vinous character, structure and finesse make it ideal for the table, perhaps with a sole meunière.
In the vineyard, in the cellar
The Gras Moutons cuvée comes from a hilltop overlooking the Maine in the commune of Saint Fiacre. The subsoil consists of gneiss, a layered rock that allows for good root establishment. The soil is clay-siliceous and fairly deep. This vineyard is planted on the summit and on the south-facing slope of a hill overlooking the Maine.
The grapes are harvested by hand and transported to the cellar with great care. The pneumatic press is filled by gravity; the grapes are not crushed. The grape juice is very lightly settled, then left to ferment in underground vats
for one to two months, without the addition of yeast. The wine is aged for around eight months on its fermentation lees with occasional stirring.
