Janus
, the name of this cuvée from Domaine de l'Ecu
, refers to the Roman god of beginnings and endings. These two facets are evident in this wine, which offers a lively attack alongside a full-bodied, supple mid-palate. An original take on Chardonnay
that captivates with its frank, immediate vibrancy (citrus, lime, iodine) before giving way to a slightly richer development without a hint of tedium. A skewer of salmon, a seafood tagine, and you’re in heaven.
Tasting
The Janus cuvée from Domaine de l'Ecu features an elegant nose with pronounced iodine and mineral notes, hints of green seaweed, citrus and lime. A crisp attack, an expressive, relatively powerful wine that develops lovely bitter notes and suppleness on the mid-palate, with notes of orchard fruit and citrus zest. The finish is citrusy and briny. A wine aged in concrete vats, vinified without added SO₂, which definitely breaks the mould of traditional Chardonnay. A brief decant is recommended whilst young.

- Cultivation: Organic and Biodynamic
- Certified Organic since 1975
- Demeter biodynamic certification since 1998
- Biodyvin biodynamic certification since 2014
- Work: ploughing and scarifying the soil, suckering, debudding, leaf removal. Simple Guyot pruning.
- Harvest: 100% manual. Grapes received by gravity, no pumps used.
- Yield: around 35 hl/ha
- Vinification: pneumatic pressing, whole-cluster pressing. No settling. Fermentation 100% with indigenous yeasts.
- Ageing: in concrete vats for 9 months. Unfiltered, unfined.
