Description
The Chablis A l'Ouest from Domaine de l'Enclos comes from the estate’s westernmost vineyard, situated on a high plateau in Beine, on a hillside overlooking the Premier Cru Vau Ligneau. Vinified without sulphur, the wine surprises with its bright, energetic vigour, enhanced by a slightly effervescent attack. The roundness and fullness on the palate contribute to the wine’s indulgent character, which calls for a rustic aperitif featuring squid fritters and thinly sliced andouillette.
