The ‘Entre Ciel et Terre’ cuvée from Domaine de Prapin is an unconventional Coteaux du Lyonnais in which the Gamay reveals itself to be rich, light and spicy. The fruitiness is sublime: it oscillates between red and black fruits, with a hint of mint, a touch of black pepper and a hint of liquorice. The texture is ultra-silky, complementing a profile of freshness and liveliness. This is a wine that clearly calls for some typical Lyon specialities!
In the vineyard, in the cellar

- Viticulture: The entire vineyard is managed using organic farming methods with biodynamic techniques

- Vinification: The grapes are destemmed and then placed in vats. Spontaneous fermentation with indigenous yeasts, followed by a two-week maceration in concrete vats. Daily pumping over and traditional punching down. The free-run juice and press juice are separated and then blended together.
