Description
The Vin Jaune from Domaine Sainte Marie (Côtes du Jura appellation) is a fine example of its kind. It has an expressive nose characterised by orange peel, dried fruit and walnut. The attack, both sharp and dynamic, is extremely mouth-watering, with tangy notes. The mid-palate is rich, powerful and endless. The overripe fruit brings a richness that perfectly balances the wine’s traditional oxidative character … It should be opened a few hours in advance, and served with a fine piece of 24-month-old Comté.
In the vineyard, in the cellar
Terroirs of Les Normois and Arlay, south-facing, sheltered slopes and terraces above the Seille. A thin layer of clay-limestone soil over exposed blue marl, with fossils of belemnites and encrine feet.
100% Savagnin aged for a minimum of 6 years and 3 months, without topping up and with a veil, in used oak barrels. The ageing process is always guided by the pursuit of finesse and freshness. This wine, aged in contact with the air, develops resistance to oxygen and thus great longevity.
