Description
This Côtes du Jura from Domaine Sainte Marie embodies a rich and elegant expression of the Trousseau grape. The result of a long maceration, the wine boasts impressive depth, evident both in its deep ruby colour and its peppery palate, which is concentrated yet never overpowering. The bouquet evokes strawberries, blackberries, cherries and pomegranates. The palate is supple and silky, without the slightest hint of harsh tannins, and benefits from a balance ensured by a perfectly integrated structure. Pair it with a Morteau sausage, grilled red meat or even small game, and it will reveal its full potential.
In the vineyard, in the cellar
Champagne sur Loue terroir, south-west facing. Clay-limestone soil over white limestone beds. The vineyard, which has been grassed for 30 years, yields low yields. Precise leaf removal and vine-by-vine monitoring of a small number of bunches allow for the production of slightly overripe grapes with concentrated sugar levels. Harvesting is done by hand to ensure rigorous sorting of the grapes.
Maceration takes place in demi-muids (600-litre barrels), 50% new and 50% one-year-old, for around a month. The temperature regime is rigorous, with long alcoholic fermentations, and malolactic fermentation initiated immediately afterwards before pressing.
