Description
The Vent d'Ange cuvée from Domaine Pattes Loup is a precise and meticulously crafted Chablis. A wine perfectly held together by its athletic structure and a perfectly balanced finish. On the palate, it is full-bodied and velvety, with notes of zesty citrus and a hint of floral character. Thomas Pico’s signature is dazzling; connoisseurs will find much to appreciate here.
In the vineyard, in the cellar
A wine, naturally, made from 100% Chardonnay, organically grown. A blend of grapes from the original plots, cleared and replanted in the Pattes Loup vineyard. Complemented by older vines (averaging 35 to 40 years old), located in the Ménardes and Malentes vineyards. The common thread: the nature of the soils, rich in Kimmeridgian marl. Fermented with indigenous yeasts. Aged in vats and barrels for 12 to 18 months. Very little sulphur, just a light protective layer at bottling.
What to eat with a Chablis Vent d'Ange from Domaine Pattes Loup?

- Zander in beurre blanc

The Guide to the Best Wines of France ★★
Based in Courgis, Thomas Pico has been working the vineyards since 2004, which he immediately converted to organic farming. The estate has gradually expanded and Thomas is now also in charge of the family estate (Domaine de Bois d'Yver), from which his vines originate. Out of respect for the terroirs, he refuses to use a grape-harvesting machine, insists on working the plots by hand—located on the left bank of the Serein (four Premier Crus)—and limits yields, unless nature takes care of it as in 2015, 2016 and 2017… Vinification using indigenous yeasts, construction of a new winery in 2014: the wines have improved rapidly. The latest vintages shine with a unique brilliance, thanks to extended ageing periods. (Source: La Revue du Vin de France – Guide Vert 2023)
