- Grape variety: white-juiced black Gamay, mass selection
- Terroir: Plateau with north-east exposure on granitic soils.
- Vines: Guyot-Poussard pruning, manual debudding, regular mechanical and manual soil cultivation during the season beneath the
vines. Grass strips between the rows. - Average age of vines: 60 years
- Vinification: Harvested exclusively by hand at optimal ripeness, sorted at the vine and on the sorting table. Vatting via conveyor belt. 10-day maceration with whole bunches. Vinification and ageing without sulphur, using natural yeasts from the grapes.
