Description
With a touch of "Blanc Vrai", Drappier Blanc de Blancs Champagne displays floral elegance, remarkable fruitiness and a fine balance. The nose evokes white peach and pear, as well as more floral notes such as peony. On the palate, it is a mineral Champagne, with hints of biscuit, creamy and enveloping, and characterised by a constant freshness.
In the vineyard, in the cellar
Only first-press juices are used. Low-pressure mechanical presses. Gravity is utilised to avoid pumping and reduce the risk of oxidation. Minimal use of sulphur. Natural settling. Alcoholic fermentation for approximately two weeks at low temperature. Followed by natural and complete malolactic fermentation. No filtration. 100% of the wines are aged in vats to preserve maximum freshness. After bottling, the cuvée is matured for 2 to 3 years on racks. Dosage: 8 g/l.
Terroir, organic farming and natural methods
Environmental and climate protection is not merely a stance for the Drappier champagne house. Organic production applies to the bulk of the range, from non-vintage bruts to the grand cuvées. Furthermore, as Michel Drappier is intolerant to sulphur, he offers champagnes with minimal sulphur levels. Notably, a brut nature that is entirely sulphur-free.
