Description
A change of style at Domaine Mouscaillo with this fruity, delicate Pinot Noir, characterised by wonderfully fresh cherry-like aromas. Its Languedoc origins are almost forgotten, such is the wine’s slender structure and refined tannins. A truly fine wine that should express itself even better with a few years’ ageing.
In the vineyard, in the cellar
- Grape varieties: 100% Pinot Noir.
- Average age of vines: 26 years.
- Planting density: 6,500 vines/ha.
- Soil type: Clay-limestone
- Terroir: A plot at an altitude of 400 m (southern exposure, influenced by three climates: Pyrenean (predominantly), oceanic and Mediterranean).
- Yields: 35 hl/ha.
- Harvest method: Hand-picked with rigorous sorting in the vineyard. The grapes are harvested at optimal ripeness (without overripening). Before entering the vat, the bunches are destemmed.
- Vinification and ageing methods: Cold pre-fermentation maceration. Pump-overs are carried out sparingly (once a day), with the aim of disturbing the grapes as little as possible. Traditional fermentation and maceration in vats at room temperature. Aged in demi-muids for 11 months, followed by 8 to 11 months of bottle ageing in the cellar.
