Olivier Pithon’s Laïs blanc is a magnificent ambassador for the Calce terroir, combining freshness, depth and complexity. Strange to name a wine after a cow? Not so odd when your name is Olivier Pithon and you know Laïs, a Jersey cow in Catalonia.
In the vineyard, in the cellar
A blend of 60% Maccabeu, 20% Grenache Blanc and 20% Grenache Gris. A blend of schist soils. Hand-harvested, direct pressing. Aged half in wooden vats and half in barrels for 10 months. Yield 35 hl/ha.
