Description
The Rancio Ambré from Domaine Le Clot de l'Origine is an exceptional Maury, a blend of Grenache Gris, Grenache Blanc and Macabeu. 30 days’ maceration, 60 months in barrels. Aromas of bitter orange, saffron, praline, curry and a few oxidative notes: splendid! … The palate shines with its complexity, an elegant astringency and a reasonable sweetness. The finish is impressive; it develops smoky notes. An incredible pairing with a tarte tatin or crème brûlée.

- Grape varieties: Grenache Gris (40%), Grenache Blanc (30%) and Macabeu (20%)
- Soils: Black schist, south-facing
- Terroir: Maury
- Farming methods: organic. Ploughing and grubbing once a year. Clearing of vines with a pickaxe. Treatments with sulphur, copper and essential oils.
- Yield: 15 hl/ha
- Vinification: Fermentation in vats for 2 weeks, indigenous yeasts, fortification with organic alcohol at the end of September
- Ageing: 6 months on fine lees in 300-litre barrels
