Description
Stéphane Tissot produces a magnificent Arbois cuvée from Trousseau grapes macerated for six months in 420-litre amphorae that are not buried. No added sulphites. The wine reveals intense, deep aromas of black fruits, cloves and white pepper. Built on a full-bodied structure with silky tannins, the palate is fleshy and dense whilst retaining brightness and a lovely savoury quality.
In the vineyard, in the cellar
- Terroir: This Trousseau comes from five terroirs: Rosières, Béranger, En Muzard, Corvées sous Curon and Chevrette. The Trousseau vines are planted on soils composed of limestone scree and Lias clay.
- Age of vines: 20 years
- Planting density: 7,000 vines/ha
- Cultivation methods: Biodynamic viticulture, Ecocert-certified and Demeter-inspected. The vines are cultivated without weedkillers, chemical fertilisers or synthetic products. We use sulphur, copper and herbal infusions to treat the vines. We produce and apply our own compost. These vines are fully ploughed.
- Harvest, vinification and ageing: Hand-harvested, destemmed by hand, then placed in 420-litre amphorae without SO2. Maceration for 3 months. After pressing, the wine is aged for 8 months in amphorae with topping up, then bottled without SO2 and without filtration.
