Description
Domaine Bobinet’s Poil de Lièvre is a Chenin with notes of meadow flowers, Granny Smith apple, pear and almond. On the palate, it combines richness and freshness, with a distinct minerality. We particularly appreciate the tension and fluidity of this fine Chenin. Enjoy it with salmon en papillote or with small goat’s cheeses as a snack.
In the vineyard, in the cellar
- 100% Chenin (25–50 years old)
- Clay-limestone plot in Dampierre-sur-Loire
- hand-harvested into small crates to preserve the bunches
- Direct pressing
- Natural malolactic fermentation
- Aged for 4 months in stainless steel vats
