Description
Aged for 24 months on the lees, this Mâcon-Villages from Julien Guillot (Clos des Vignes du Maynes) is a gem of a Chardonnay in its purest form. Aromatic (white flowers, citrus, a hint of the exotic) and crisp, the wine shines above all for its freshness. An excellent choice to accompany grilled fish, or simply as an aperitif.

- Communes: the lower slopes of the Saône Valley in the communes of Chardonnay, Montbellet and Viré-Clessé
- Terroir: Weathered fine silt on limestone. The subsoil is of the BATHONIAN type, dating from the Middle Jurassic; these are hard limestones found throughout Burgundy. Soil: 50 cm to 1 m of clay-limestone. This consists of clayey silt deposited by colluvial processes on weathered, pure silt that is highly calcareous and rich in silica, giving the wines a lovely minerality.

- Vinification: Hand-harvested with sorting on the vine and on the table if necessary / Slow pressing / Settling for 6 to 18 hours / Fermentation in vats with indigenous yeasts, without SO₂ / Ageing on lees for 12 months, 2g of SO₂ at racking and 2g after filtration / Light filtration
