Comte Abbatucci ’s Diplomate cuvée is a unique wine made from old vines of indigenous grape varieties grown on granite soil. With a more refined profile than the Général cuvée, the wine seems to possess an extra burst of energy. The nose promises a truly beautiful start to the sensory journey: exotic fruits, white flowers and scents of the maquis. The palate is luscious, the fruit enhanced by an exquisite smoky minerality, hints of bitterness and peppery notes. The finish is incredibly mouth-watering, perfectly balanced, impressively long and dynamic throughout.
In the vineyard, in the cellar
Comte Abbatucci”s Diplomate in details:
- Grape varieties: Vermentino, Brustiano, Bianco Gentile, Genovese, Rossola Bianca
- Terroir: Granitic, sandy-loam soils
- Exposure: North to North-West
- Farming methods: Biodynamic with influences from phytotherapy practices. Ploughing by horse and control of winter grass growth thanks to our flock of sheep.
- Harvest: Hand-picked into small crates, with systematic sorting of the grapes in the vineyard and in the cellar
- Vinification: Assembly of several plots in the press or pressed separately, according to the maturity of the different grape varieties. Direct pressing in whole grapes or destemmed, depending on the maturity of the stalks. Static settling from 24 to 48 hours. Alcoholic and malolactic fermentations in demi-muids.
- Ageing: Aging under wood (half-muid) and on total lees for 9 months, then in stainless steel tanks for 6-7 months after assembling the best batches. Natural tartaric stabilization by keeping it cold. Filtration during bottling.
