Description
With his Les Pierres Blanches cuvée, Damien Bonnet is redefining the character of a white Gaillac at Domaine de Brin. This fresh wine, with its beautifully crisp aromas, delicately evokes notes of lime blossom, verbena and white flowers. On the palate, it is smooth with a slightly stony texture, and the finish is vibrant and briny. Perfect for serving with grilled squid.
In the vineyard
- Mauzac 65% and Len de l’El 35%
- Very stony clay-limestone soil, south-facing, altitude 285 m
- Permanent grass cover between the rows and soil cultivation between the vines
- Multiple manual and mechanical operations throughout the year to ensure well-aerated, healthy and fully ripe grapes with a low yield of around 30 hl/ha
In the cellar
- Grapes harvested by hand into small crates according to the optimal ripeness of the different grape varieties
- Direct pressing of whole bunches followed by cold settling of the must
- Spontaneous fermentation using the indigenous yeasts naturally present on the grape skins
- Vinification and ageing of the wine without sulphur for 9 to 12 months in barrels (used for 3 to 4 vintages) on lees, with malolactic fermentation carried out
- Natural clarification without fining
- Bottling with very low sulphite content.
