- VINIFICATION: Natural vinification. Direct pressing, destemmed and whole bunches. Fermentation in stainless steel vats, concrete vats and barrels
- AGEING: Aged in concrete vats and barrels for 6 months
Fabien Jouves’ Mas del Périé estate
Fabien JOUVES comes from an old farming family in the Causse region. He became a winegrower in 2006 by establishing Mas del Périé on the highest slopes of Cahors. Malbec (Cot) is the dominant grape variety here. The estate is situated at the junction of the terroirs of the Quercy hillsides and those of Cahors. Selecting specific plots was the obvious choice to express the different facets of Malbec. This expression of the terroir is enhanced by biodynamic farming that respects life and the plant. As well as people and their environment.
