Description
An exceptional voile wine aged under cover for six years by Damien Bonnet at Domaine de Brin! Notes of ripe citrus, dried fruit, spices and dried flowers. The oxidative balance is sublime. Complexity and precision characterise this fresh, elegant wine, which unfolds into a long finish. A magnificent pairing with cheese, unless you prefer a cream-braised chicken.
In the vineyard
- Mauzac 60% and Len de l’El 40%
- Very stony clay-limestone soil, south-facing, altitude 285 m
- Permanent grass cover between the rows and soil cultivation between the vines
- Multiple manual and mechanical operations throughout the year to ensure well-aerated, healthy and fully ripe grapes, with a low yield of around 30 hl/ha
In the cellar
- Hand-harvested

- Spontaneous fermentation with indigenous yeasts
- Ageing for 6 years with temperature fluctuations to encourage oxidation and the concentration of aromas
