Description
The Cahors Le Lac aux Cochons from Sophie and Julien Ilbert (Combel La Serre)
takes its name from the wild boars that like to make their home in the small lake near the vineyard. It develops an aromatic and complex bouquet of ripe red and black fruits (wild berries, redcurrants, plums, cherries), underpinned by notes of spices and liquorice. Full-bodied, supple and delicate, the palate is carried by mellow tannins and very subtle oak. Great charm.

The Cahors Le Lac aux cochons de Combel La Serre cuvée in detail:
- GRAPE VARIETY: 100% Malbec (vines around fifty years old)
- TERROIR: limestone soils of the Causse at an altitude of 350m
- VINIFICATION: Harvesting and vineyard work carried out by hand. Vinification in truncated cone-shaped vats with punching down and pumping over
- AGEING: 18 months in truncated cone-shaped vats
A breath of fresh air for "Black Wine"
Historically known as “Black Wine” due to the dark, purplish colour of its Malbec grapes, Cahors has long been regarded as an austere wine. “Dad’s wines”, as they are sometimes referred to in wine-tasting circles. However, driven by a new generation of winemakers, Malbec has been showing a new side for the past twenty years or so. Thanks to clean, small-scale viticulture, these new estates offer more approachable wines that emphasise fruit at the expense of extraction and structure.
