Description
The Vin Jaune from Domaine de la Borde stands out from other Arbois wines thanks to its added finesse, freshness and the distinctive minerality of the Pupillin terroir. Complex, with notes of spice and walnut, and a remarkably long finish.
In the vineyard, in the cellar
The Vin Jaune from Domaine de la Borde comes from a terroir of deep grey and blue marl from the Lias period. West-facing, steep slope (25%), altitude 350 m to 450 m. Age of vines: approximately 40 years. Hand-harvested, whole-bunch pressing, cold static settling (10°C) for 12 to 24 hours, alcoholic fermentation in casks (6 and 12 hl), indigenous yeasts, aged on lees for 10 to 12 months followed by 80 months under a veil (oxidative ageing). Filtered through clay, no fining, SO₂ added after malolactic fermentation (between 1 and 2 g/hl), total SO₂ < 40 mg/l. Ageing under a veil is taken a step further (80 months).
Julien Maréschal runs his Domaine de la Borde using organic and natural farming methods. Respect for the terroir is reflected in key principles such as natural grass cover and soil management (ploughing, ridging, scarification, etc.). No chemical weed control, contact treatments without synthetic molecules… But also experiments in biodynamics since 2009 (horn manure and horn silica applied to all the vines). The harvest is, of course, carried out by hand at the exact moment of ripeness, with rigorous sorting taking place in the rows and in the cellars. In the cellar, only indigenous yeasts are used and very little SO2 is employed to remain as true to the terroir as possible.
