In the vineyard, in the cellar
Terroirs of Les Normois and Arlay, south-facing, sheltered slopes and terraces above the Seille. A thin layer of clay-limestone soil over exposed blue marl, with fossils of belemnites and encrine roots.
100% Savagnin vinified in vats then patiently aged in barrels without topping up (not filled to the brim) under a protective yeast cap and concentrated by natural evaporation over the years: the famous ‘angels’ share’. Unique ageing conditions in a dedicated, well-ventilated cellar subject to the marked climatic variations of the Jura seasons
