Description
Grape varieties: 66% Chardonnay, 33% Savagnin
Appellation: AOP Macvin du Jura
Marc: Marc brandy from the estate, aged for 15 months in casks.
Production: Pneumatic pressing of whole bunches of Chardonnay and Savagnin. Static settling by gravity (24 hours) followed by blending of the clarified juices with the marc spirit. The added alcohol kills the yeasts present in the juice and prevents fermentation. The resulting Macvin will have an alcohol content of approximately 16.5%.
