In the vineyard, in the cellar
The Pont de Breux Impoulsif 2023 vintage in detail:
- Grape variety: 100% Poulsard
- AOP: Côtes du Jura
- Soil: marl
- Altitude: 325 metres
- Age of vines: 30 years
- Harvest: hand-picked. Manual destemming using a sieve at the end of the plot.
- Vinification: Alcoholic fermentation using indigenous yeasts. Daily punching down and pumping over if necessary to oxygenate the yeasts. Pressing after maceration lasting 3 weeks to 1 month. Malolactic fermentation carried out.
- Ageing: 12 months in vats. Bottled without fining or filtration.
