Description
‘Les 10 Bulles’ from Domaine de la Touraize is a superb, undosaged rosé Pet Nat – just the way we like it! … Lively and refreshing, with a fruity bouquet blending raspberry and other red berries. The effervescence is barely creamy, with fine bubbles. Ultra-refreshing as an aperitif or paired with fruit-based desserts. (Pet Nat = Pétillant Naturel … For the uninitiated).
In the vineyard, in the cellar
- Grape varieties: Pinot 20%, Trousseau 80%
- Appellation: Vin de France
- Cuvée: Les 10 Bulles
- Cultivation method: Winter and spring, ‘Guyot’ pruning. Trellising in an arched style. Application of organic matter in late winter. Spring and summer, debudding followed by lifting. Vine treatments are exclusively based on copper, herbal infusions and sulphur, with no pesticides. Our soil is ploughed several times during the season between the rows and ‘under the row’. Application of horn manure (500p) and silica (501) to naturally strengthen the plant. No chemical weed control.
- Harvest: Hand-picked into 20 kg and 40 kg perforated crates.
- Vinification: Pneumatic pressing of whole bunches. Settling by gravity. Spontaneous alcoholic fermentation using the grapes’ indigenous yeasts. Alcoholic fermentation begins in vats, then the still-fermenting juice is bottled. The carbon dioxide naturally released during bottle fermentation gives the cuvée its sparkle, hence the name ‘pétillant naturel’. Bottle fermentation stops after a few days as the yeasts are deprived of oxygen. They can then no longer consume the remaining sugars.
- Ageing: Stored for one month ‘sur latte’, then placed on racks for one month. Manual riddling twice a day, turning the bottles a quarter turn.
- Disgorging: Undosaged cuvée. Sealed with a capsule.
