Description

The Chardonnay Terre du Lias from Domaine de la Borde is an Arbois Pupillin produced from a terroir of blue Lias (Jurassic) clay. Vinification takes place in barrels with oenological intervention for 12 months. A marriage of fruit and minerality, smooth yet taut. The wine perfectly expresses the uniqueness of this deep blue Lias marl terroir, quite distinct from Burgundian vineyards.

In the vineyard, in the cellar

The Domaine de la Borde’s Terre du Lias Chardonnay is planted on a steep slope in Arbois Pupillin at an altitude of 450 m. The grapes are partially destemmed and the juice ferments in 600-litre barrels, after which the wines are aged for two months in Stockinger casks. Fermented in large barrels and casks, aged on fine lees for one year.

Julien Maréschal runs his Domaine de la Borde using organic and natural farming methods. Respect for the terroir is reflected in key principles such as natural grass cover and soil cultivation (ploughing, ridging, scarification, etc.). No chemical weed control, contact treatments without synthetic molecules… But also experiments in biodynamics since 2009 (horn manure and horn silica applied to all the vines). The harvest is, of course, carried out by hand at the exact point of ripeness, with rigorous sorting taking place in the rows and in the cellars. In the cellar, only indigenous yeasts are used and very little SO2 is added to remain as true to the terroir as possible.
