Description

Matris is a mass selection of Chenin (thanks to Thierry Michon & Mark Angeli), grown using biodynamic methods and aged in amphorae at Domaine de l'Ecu. A Chenin of the very highest calibre, aromatic and with a long finish that combines tension, power and minerality. Best enjoyed after a few years’ ageing, paired with fine fish (John Dory, turbot) in a saffron sauce.

Tasting

Matris is a Chenin with a deep wheat-coloured hue. An elegant nose with pronounced mineral notes blending citrus with delicate hints of white flowers, quince, lime blossom, honey and acacia. A supple attack; a very dense, rich, full-bodied and opulent wine. Sleek and complex on the palate, it blends notes of yellow fruit and orchard fruit, balanced by the freshness and acidity of citrus.

  • Grape variety: 100% Chenin. Mass selection (Thanks to Thierry Michon & Mark Angeli)
  • Terroir: Orthogneiss subsoil, south-east facing
  • Farming: Organic and Biodynamic
    • Certified Organic since 1975
    • Demeter biodynamic certification since 1998
    • Biodyvin biodynamic certification since 2014
  • Work: ploughing and scarifying the soil, suckering, debudding, leaf removal.
  • Harvest: 100% manual. Grapes received by gravity, no use of pumps.
  • Vinification: No SO2. Pneumatic pressing, whole bunches. No settling. Fermentation 100% with indigenous yeasts.
  • Ageing: in amphorae for 12 months. Unfiltered, unfined.

  • Tuna rillette with pink peppercorns, coriander and chives.
  • Pork cheeks with peanut emulsion.
