Description
The Domaine de l’Enclos Chablis 1er Cru Mont du Milieu is situated at the western edge of the vineyard. Grown on white marl soil at high altitude, the wine is ripe, elegant, crystal-clear and long-finishing. The bouquet oscillates between notes of lemon, yellow peach and quince, with mineral (chalk) and menthol notes. Thanks to skilful ageing, the wine offers admirable depth whilst preserving its vigour and refined freshness. Paired with baked turbot, roasted lobster or a truffle-stuffed chicken, it is nothing short of ecstatic.

Chablis 1er Cru Mont de Milieu, flagship vineyard
This hill, once split in two by an actual border, separated the County of Champagne from the Duchy of Burgundy. Mont de Milieu is situated on the slope of a hill sheltered from the north winds by a wood. A climat bathed in sunshine from morning to night, thanks to a south/south-east facing hillside with a moderate, even slope. Facing the Serein valley, which is particularly wide at this point, Mont de Milieu is imposing, open and airy. This vineyard is often described as homogeneous: across its 44 hectares, the calcareous clay and small white limestone pebbles blend together in astonishing harmony. A flagship climat of the right bank, much like Vaucoupin or Vau Ligneau, it stands alone as a flagship and does not encompass neighbouring climats under its wing.
What is a flagship Chablis climat?
The Chablis vineyard comprises 79 cadastral localities designated for wine-growing within the defined area of the Chablis Premier Cru appellation. The INAO (Institut National de l’Origine et de la Qualité) has grouped these into 40 Climats that may be indicated on the bottle labels. In reality, only around twenty of these are commonly used.
A distinctive feature of Chablis is that these 40 Climats include 17 principal Climats, also known as ‘flagship’ Climats. Wines produced in the Climats neighbouring these principal ones may either bear the name of the Climat from which they are geographically derived, or take the name of the flagship Climat to which they are linked.
