Description
The Chablis 1er Cru Beauregard from Domaine Pattes Loup
makes an immediate impression with its density and vigour. The nose evokes candied lemon, orange blossom and hints of fresh fennel, along with a touch of brininess. The textured palate is underpinned by a vertical structure, a sharp minerality and a natural freshness conferred by this vineyard site (Beauregard benefits from a topography and a valley-floor location that promotes freshness). A sparkling, high-class vintage that combines elegance, complexity, power and a delicious salinity on the finish. It will be perfectly complemented by pike-perch in white butter sauce or linguine with clams.
In the vineyard, in the cellar
- Grape variety: 100% Chardonnay
- Farming: organic and biodynamic.
- Terroir: Slopes with shallow clay soils over Kimmeridgian limestone marl, south-facing
- Plots: locations known as "Pattes Loup", "Ménardes" and "Malentes"
- Fermentation: indigenous yeasts
- Ageing: in vats for up to 18 months. Very little sulphur, only a light protective layer added at bottling.

Based in Courgis, Thomas Pico has been working the vineyards since 2004, which he immediately converted to organic farming. The estate has gradually expanded and Thomas is now also in charge of the family estate (Domaine de Bois d'Yver), from which his vines originate. Out of respect for the terroirs, he refuses to use a grape-harvesting machine, insists on working the plots by hand—located on the left bank of the Serein (four Premier Crus)—and limits yields, unless nature takes care of it as in 2015, 2016 and 2017… Vinification using indigenous yeasts, construction of a new winery in 2014: the wines have improved rapidly.
