Description
The change in winemaking techniques adopted by Domaine de Montmain works wonders on this Hautes-Côtes de Nuits cuvée, aged exclusively in vats. It’s a real treat, and this is evident from the very first glance: a luminous cherry-red colour with subtle ruby hues. The nose reveals fruity aromas of raspberry and wild strawberry, followed by subtle spicy notes on the finish. No over-oaking or overly pronounced structure. This lovely, savoury and smooth Pinot Noir will be a delight with a vegetable gratin or chicken skewers.
In the vineyard, in the cellar
The vines are trained using the ‘high and wide’ method (3 metres apart). This method, developed in the 1970s, has allowed the vines to adapt perfectly to their climatic environment. It is an innovation in Burgundy; it facilitates natural pest control. It is a highly sustainable and ecological approach: no penetrating or systemic products, no clones in the vines, no exogenous yeasts during vinification and, above all, no filtration. The grapes are harvested by hand, with selection and sorting taking place both in the vineyard and in the winery. Vinification is carried out in the traditional manner, in open vats, at low temperatures for three to four weeks. Maturation takes place in vats.
