In the vineyard, in the cellar
The Coteaux du Lyonnais Amphore from Domaine de Prapin in detail:
- Grape variety: Gamay
- Terroir: A selection of old Gamay vines in the commune of Taluyers, planted on granitic soils
- Viticulture: Organic and biodynamic farming (Demeter)
- Average yield: 30 hl/ha, harvested by hand with an initial sorting in the vineyard
- Vinification: The grapes are destemmed and then sorted berry by berry. Fermentation then begins spontaneously with indigenous yeasts, and maceration lasts for one month in a terracotta jar. Everything is done by hand with daily punching down.
- Ageing: 12 months in 500-litre TAVA terracotta amphorae. There is no fining or filtration. The wine is then racked and bottled at peak ripeness.
