In the vineyard, in the cellar
Terroirs of Les Normois and Arlay, south-facing, sheltered slopes and terraces above the Seille. A thin layer of clay-limestone soil over exposed blue marl, with fossils of belemnites and encrine roots. The Savagnin grape produces berries with thick skins and very acidic juice.
The Savagnin grape variety, used on its own, is vinified in temperature-controlled vats and spends 12 months in topped-up casks on fine lees.
