It is produced from a mass selection of Pinot Fin planted in 1964, a very old variety once used for the finest terroirs, including that of Romanée-Conti. Each bottle is a masterpiece, though it is worth waiting a few years to fully appreciate its complexity. Finesse and elegance guide the tasting from start to finish. Julien Guillot’s Cuvée Auguste (Clos des Vignes du Maynes) has become a legendary wine in southern Burgundy. It must be said that the wine’s originality and rarity are enough to pique the curiosity of even the most discerning connoisseurs. It is produced from a mass selection of Pinot Fin planted in 1964, a very old variety once used for the finest terroirs, including that of Romanée-Conti. Each bottle is a masterpiece, though it is worth waiting a few years to fully appreciate its complexity. Finesse and elegance guide the tasting from start to finish. In the vineyard, in the cellar

  • Appellation: Burgundy
  • Grape variety: Pinot Fin, an extremely rare mass selection from 1964.
  • Rootstock: 3 309
  • Terroir: A 6-hectare vineyard plot planted by the monks of Cluny Abbey around 910. The subsoil is of the BATHONIAN type, dating from the Middle Jurassic period; these are hard limestones found throughout Burgundy. The distinctive feature lies in the pearly slab limestone, which produces magnificent limestone crystals: calcite-aragonite. The shallow soil, ranging from 5 cm to 50 cm in depth, is of a clay-limestone type. It consists of clayey silt formed by colluvial processes on top of weathered, very calcareous and silica-rich pure silt, which imparts a lovely minerality to the wines.
  • Vines: Single Guyot and Guyot Poussard pruning / Soil cultivation / Debudding / manual on the vine and at the base
  • Yield: 20 hl/ha
  • Farming: Organic since 1954 and biodynamic since 1998.
  • Vinification: Hand-harvested with sorting on the vine and on the sorting table if necessary / Semi-carbonic whole-bunch fermentation, with cold pre-fermentation, indigenous yeasts, no SO₂, no chaptalisation and no enzymes, just joy and plenty of good humour
  • Ageing: in barrels, without racking / Blended in vats, 40 days before bottling / Bottled under nitrogen in September without filtration.
