The Mise Tardive from Domaine Pattes Loup (Thomas Pico) is a precise and meticulously crafted Chablis that has undergone two years of extended ageing in vats. A wine perfectly held together by its athletic structure and a perfectly balanced finish. The palate is full-bodied and velvety, with notes of citrus and a hint of florals. Thomas Pico’s Chablis Mise Tardive from the Pattes Loup estate in detail:
- Grape variety: 100% Chardonnay, of course!
- Cultivation: Organic and biodynamic
- Terroir: a blend of grapes from the original plots, cleared and replanted in the Pattes Loup vineyard. Complemented by older vines (35 to 40 years old on average), located in the Ménardes and Malentes vineyards. The common thread: the nature of the soils, rich in Kimmeridgian marl.
- Fermentation: indigenous yeasts
- Vinification: very little sulphur, only a light protective dose at bottling.
- Ageing: in vats for up to 18 months.

Based in Courgis, Thomas Pico (Domaine Pattes Loup) has been working the vineyards since 2004, which he immediately converted to organic farming. The estate has gradually expanded and Thomas is now also in charge of the family estate (Domaine de Bois d’Yver), from which his vines originate. Out of respect for the terroirs, he refuses to use a grape-harvesting machine, insists on working the plots by hand – situated on the left bank of the Serein (four premier crus) – and limits yields, unless nature takes care of it as in 2015, 2016 and 2017… Vinification using indigenous yeasts, construction of a new winery in 2014: the wines have improved rapidly.
